Our story

Where East meets West.

Cascara Coffee Company pours the coffee traditions of Yemen alongside everything you’d want from a modern specialty café. Here’s where those traditions come from, and what to order when you visit.

The name

Cascara means husk.

Cáscara is Spanish for husk: the dried skin of the coffee cherry, the part most of the world throws away. In Yemen, those husks are simmered with ginger and spice into a drink called qishr, from the Arabic for husk. Two languages, one idea: the same cup, named twice.

Yemen and coffee

Where the world learned to drink coffee.

The earliest reliable accounts of coffee as a drink come from Yemen in the middle of the 1400s, where Sufi circles brewed it to stay awake through night-long prayers.

From there it travelled out through Mocha, the Red Sea port that shipped Yemen’s mountain-grown coffee to the world. Until the end of the 1600s, most of the world’s coffee came from Yemen, and the port’s name still sits on café menus everywhere as the mocha.

Aden, the port city on Yemen’s southern coast, gave its name to Adeni tea: black tea, spice and cream, which we pour by the cup or by the pot.
